Oregon Cake!!!!!!

I am back and with a vengeance. I made a cake for our cub scout pack meeting on Thursday and it was in celebration of Oregon's 150 birthday. Hoo doggie did it come out perfect!!!
It was in the shape of Oregon and I put some of the bigger cities on it, along with rivers and highways.
I made the cake, butter cream frosting and fondant from scratch and it all tasted yummy. I am soooo excited it seems that i am getting better every time I try.

Pumpkin Cupcakes

dessert
30 min. 3 Dozen
4 Eggs
2 1/2 Cups Flour
1 1/2 Cups sugar
1 16.oz Can of Pumpkin
(Not pie mix)
1 tsp. Baking soda
3 tsp. Baking Powder
2 tsp Cinnamon
1 Cup Oil


*Preheat oven to 350 Degrees.

*Beat eggs in mixing bowl for 1 1/2 minutes.

*Put into separate bowl the flour and sugar and blend.

*Into the eggs add the pumpkin, baking soda, baking powder, cinnamon and Oil.
Mix well.

*Add the flour and sugar mix to the pumpkin and mix one minute.

*Spoon into paper lined cupcake pans 1/3 -1/2 full.

*Cook in oven 20 minutes when toothpick inserted comes out clean.


*They should be light golden in color and spring back when touched.

*Take out of cake pans and set on baking rack right away and let cool to touch.

***You can add frosting, I suggest some cream cheese frosting.

Michelles "Gonna Be Famous" Onion Rings




Michelles "Gonna Be Famous" Onion Rings


1 Sweet onion, peeled and sliced thick

1 1/2 cups flour
2tsp Johnny's seasoning
2tsp Lemon pepper
1/2 tsp garlic powder
1-2 eggs
1/4- 1/3 cup milk
Oil



Heat deep pan at medium-high with enough oil to put onion in til almost covered.(how much oil depends on thick you cut the onion)

Combine flour, Johnny's, lemon pepper and garlic powder in medium bowl. set aside

Combine milk and eggs until well blended in medium bowl.

when pan is hot start the process....

Dip one onion into egg mix shake off some excess and then dip into flour mix, shake off excess flour and then re-dip into egg and then flour.
Now carefully minding the oil, put the onion into the pan. Repeat with the rest of the onions only putting 2-4 rings in the pan at a time.

Let cook on first side until golden brown, about 2 minutes using tongs flip and repeat.

Now take out onion rings and lay on paper towels or baking rack with paper towels underneath.

Eat and enjoy.

Heavenly Hashbrowns

Heavenly Hash browns

2 bags O'Brien shredded hash browns
3/4 block of cheddar cheese Shredded
16oz sour cream
1 can cream of mushroom soup
3-5 tablespoons butter/margarine


Heat oven to 350 degrees.

Mix all ingredients except butter in a large bowl. Mix well.
Melt butter in 9x13 pan, we use glass, it sets better. Take pan out of oven and pour into bowl of ingredients. Don't scrape the butter out of pan, you will need it in the pan too. (It acts as a non-stick coating.)

Lightly mix all ingredients again, now pour it all into the pan and smash down so all is inside the pan.

Bake it about 30-40min. Check it at about 20min to make sure not spilling over. If not brown enough on top for you bake or broil it a little longer.

**now eat and enjoy, warning that its not a doctors favorite and healthy choice but ITs the best!!!

Home Made Buttercream Frosting

Butter Cream Frosting

3 cups confectioners sugar
1 cup real butter
1 tsp vanilla
1-3 tablespoons whipping cream
food coloring of your choice


Mix sugar and butter together on low until well blended. Increase to medium speed for 3 minutes.

Add vanilla and cream and continue to mix on medium until well blended.

You can add food coloring and mix well.

I also have added cocoa powder to add color and flavor, its pretty good.
